Aperol Spritz was, without a doubt, the it drink of the summer. It seemed like you couldn’t go on Instagram without seeing the cocktail posted on someone’s Insta or Story. It was like the Serena van der Woodsen of summer cocktails. Was it REALLY a summer evening if you weren’t posting a sunset photo with your Aperol Spritz? Let’s be honest.
Crisp, dry and refreshing, which is my cocktail love language, I happily had my fair share of Aperol Spritzes…spritz-s? Now summer’s over (allegedly) but I’m not ready to stay goodbye to Aperol just yet.
And so I present: an Aperol Spritz for Fall 🍂
All it takes is muddled pear, simple syrup, and a splash of vanilla extract to take the Aperol Spritz from a muggy summer to an Aperol Spritz for fall.
If you’re not ready to embrace fall juuust yet, here’s a recipe for a blood orange mint Aperol Spritz to help you hang onto summer.
- 4 thinly sliced pear slices
- 1 oz simple syrup
- ¼ teaspoon vanilla extract
- 1 oz Aperol
- Ice
- 1½ Prosecco, chilled
- In a shaker, muddle the pear slices, simple syrup, and vanilla extract.
- Add the Aperol and ice, stir to combine.
- Pour into a glass with sliced pear.
- Top with chilled prosecco
