When I see a farm stand in the summer, I immediately think: need to get as many tomatoes and peaches as I can fit into my tote. 

Tomato sandwiches are a staple of my diet in June, July, and August. And nothing says summer quite like biting into a ripe, juicy peach, usually over the kitchen sink to limit the delicious mess!

Summer time gives us the best flavors in my opinion—it definitely helps when temperatures soar and humidity kicks in!

When summer reaches its dog day point, I tend to gravitate towards no-cook snack-type meals versus actually cooking complete meals. Think caprese salads, tuna salad with avocado, and general noshing on grapes, carrots, cucumbers, and hummus. And some charcuterie in there for good measure and protein.

These delicious and simple peach and goat cheese tartines are a fantastic choice for a dinner when you worry you’ll spontaneously and instantly combust if you turn on your kitchen oven. I’ve been seriously craving peaches lately and have been looking for any excuse to eat them. Sweet peaches plus tangy goat cheese with honey topped with a sprinkle of fresh basil is a no-fuss appetizer for a summer night meal. Or, if you’re like me, it’d be the meal itself!

I used Trader Joe’s Chevre with Honey, it’s $3 for a 5 ounce log and is one of my all-time favorite Trader Joe’s cheeses. The chevre is wonderful to use on the peach and goat cheese tartines, I also love it crumbled on top of a simple salad (Think arugula and a lemon vinaigrette). It’s so perfectly spreadable on a baguette slice!

How to Assemble the Tartines

Step 1: Slice and lightly toast the baguette. I like to heat olive oil or butter in a pan  on medium and toast the baguette slices that way.

Step 2: Spread the Chevre goat cheese onto the toasted baguette slices.

Step 3: Layer the peach slices and basil ribbons.

Quick tip on the peaches: If your peaches aren’t quite ripe just yet but you are craving a summer appetizer with peaches, toss the peach slices onto the grill to bring out their sweetness.

Quick tip on how to slice the basil ribbons: Pluck fresh basil and stack the leaves on top of each other from the largest to the smallest. Roll them together so they look like a cigar (That’s the best way I can describe them!). Slice the basil log to create the ribbons and gently separate.

Tips for Serving & Variations

Make it a Meal! 
Turn this peach crostini recipe into a lovely lunch by pairing it with a simple arugula salad with lemon vinaigrette (Add shaved parm because you can never have enough cheese!) and a chilled glass of rosé.

Try Different Breads
While baguette is classic, this goat cheese and peach toast also works beautifully with grilled ciabatta for extra flavor or rustic while-grain bread.

Add Protein
To make it heartier, top with thin slices of prosciutto or serrano ham, shredded rotisserie chicken, or crushed pistachios for crunch.

Not a fan of goat cheese? Try ricotta with a drizzle of olive oil and balsamic glaze, creamy brie or whipped feta, or labneh for a tangy twist.
