{What’s For Dinner?}

Lately, life has been fairly overwhelming. Capstone, job applications, interviews, cover letters, etc. Sometimes, I wonder why there are only 24 hours in each day. Despite how hectic life can get, I like to cook dinner and enjoy sitting down and breathing after a long day and before I start in on more job applications. My latest favorite dinner was well priced & healthful, a win-win for this girl!

1. Cook salmon steak in oven as directed (This part took longer than anticipated, about 20 minutes)

2. Cook quinoa in a saucepan per the directions.

3. I roasted the broccoli and added Cajun seasoning to zest it up.

I then combined the salmon & broccoli and served over the quinoa. All in all, it took me about 20 minutes (the time it took to cook the salmon).

Broccoli: $1.50

Salmon: $7.00

Quinoa: $3.00

In total, I got 4 meals out of this entire dish so I paid $2.87/meal!
