I’m about to make a controversial statement: I prefer bellinis over mimosas. Don’t get me wrong, I enjoy a good mimosa but if I had to choose between the two, I’d go for a bellini every time. Last weekend, my roommates and I went to Paolo’s in Georgetown for brunch. I had an out-of-this-world chicken Caesar wrap (it was one of those dining moments you cannot forget) and imbibed $3 Bellinis, which were also fantastic. Bellinis are just as simple to make and the peach is perfect for the summer.
Ingredients
3 ounces prosecco
2 ounces fresh white peach puree
Preparation
Mix & serve in a champagne flute
