Grilled Scallops Dinner

One of my family’s favorite dinners is grilled scallops! Last summer,  I was at Eastern Market and spied awesome looking scallops…but then saw the not-so-awesome price tag that went with it. Sadly, I had to wait until I went home to indulge in this delicious meal. My family had this for dinner last night and I absolutely couldn’t get enough of it! It’s very easy to make and definitely a big hit for a family dinner or party.

Ingredients: 

Scallops

Green Peppers (3)

Red Onions (2)

Any other vegetable you’d want to grill

Preparation: 

Marinade the scallops in Italian dressing for at least an hour.

Soak the kabob skewers in water for 30 minutes.

After you chop up the veggies, place them in the marinade as well.

Use a pattern to place the scallops, peppers, onions and veggies onto the skewers (Challenge yourself to never repeat a pattern!).

Place the prepared skewers into a long pan and after all you’ve used all the ingredients, drizzle the remaining marinade over the skewers.

Grill until the scallops have a nice brown color on the outside.
