Meet my Valentine. My Valentine is everything a girl could possibly want: handsome, smart, funny with a killer smile. Okay, so my Valentine doesn’t have those traits but hey, it’s the perfect vehicle for cheese + Prosciutto. So really, this Valentine is a dreamboat.

Hands off, ladies, he’s mine.

Sautéed Brussels sprouts + oregano + feta + mozzarella = Lovefest 2015.

And who knew making homemade pizza dough was so simple?! Before this, the closest I’ve come to homemade pizza dough was picking some up from my other boyfriend Trader Joe’s. Shhh, don’t my Valentine!

Me + Pizza Dough didn’t have a meet-cute, though. FAR from it.

I made my first batch of pizza dough and, I thought, followed the directions to a T. A couple of hours later, I peeked to see if the dough had risen yet. NOPE. The dough was just sitting there like a rock. Instead of throwing myself on the couch and watching Friends to console my achy breaky heart, I tried another pizza dough recipe and powered through like a rom-com goddess. Or like Charlotte York and her matzoh balls.

And if my first attempt at dough was Trey, then the second round was definitely Harry. Except, you know, 100% not kosher.

Once the dough was ready to rock ‘n roll in the pan or on a baking sheet, it was time to get my toppings on board. I’ve been on a real Brussels sprouts kick lately so into the skillet went half a bag of Trader Joe’s Shaved Brussels Sprouts. Add a little olive oil, salt + pepper and sauté for about 8 minutes until browned.

My brussels sprouts pizza recipe doesn’t call for regular pizza sauce but before you spit out your coffee or flip your desk in a blind rage, I have three magical words for you: herbed olive oil. YUP.

In a ramekin or small bowl, pour about 4 tablespoons of olive oil and add whatever herb strikes your fancy. I’d added oregano to the dough and decided to keep the oregano party goin’ by adding the herb to the oil. Mix and then brush the herbed olive oil onto the dough. Now it’s time to pile on the sautêed brussels sprouts and cheese. I couldn’t choose between mozzarella and feta so guess what, I went with both. It’s my Valentine’s Day and I’ll double the cheese if I want to.

Prosciutto is the piece de resistance and your dreamboat of a pizza is (almost) ready for your hot date.

Pop into the oven at 500 degrees for 5-7 minutes or until cheese melts. Now it’s hot, cheesy date time!

Pizza Dough Ingredients

3/4 cup warm water

1 package quick-rising yeast

2 cups all-purpose flour

1 teaspoon salt

2 teaspoons sugar

1 tablespoon olive oil

1-ish tablespoon oregano

Directions

1. In a bowl, add the yeast to warm water and let it rest for 5 minutes. Then, using a wooden spoon, mix the flour, salt, sugar, olive oil and oregano. Add tiny bits of water if the dough seems to be dry and keeps cracking.

2. Roll the dough into a ball and place in a oiled bowl. Cover tightly with plastic wrap and keep in a warm, draft-free location for 3-4 hours to let it rise.

Note: If you aren’t in a hurry, you can store the dough into the fridge for 6-8 hours to rise. 

Brussels Sprouts + Prosciutto Pizza Ingredients

Trader Joe’s Shaved Brussels Sprouts

1 pizza dough

Olive oil + oregano

Feta

Mozzarella

Prosciutto

Red pepper flakes (optional but not for me)

Directions

1. Preheat the oven to 450 degrees.

2. In a skillet, heat up 1 tablespoon of olive oil and then add approximately 1/2 bag of Trader Joe’s Shaved Brussels Sprouts. Season with salt and pepper and sauté for about 8 minutes on medium-high heat.

3. In a small bowl, mix together a couple tablespoons of olive oil and oregano (or herb of your choice). Using a brush, spread the herbed olive oil onto the pizza dough.

4. Put the pizza dough into the oven for about 5-7 minutes or until crust starts to brown.

5. Add the sautéed Brussels sprouts, cheese + Prosciutto. Return to the oven for another 7 minutes or until cheese melts.

Pizza, you’re my kind of Valentine. Let’s go steady, okay?

      The pizza dough itself is delicious! I’d recommend rolling it out a bit thinner and using the dough to create flatbreads. So good!
