{Brown Bag Lunch Upgrades}

My life has been very busy lately and by the time I get back to my apartment at night, I don’t really feel like packing up tomorrow’s lunch. I know I’m not the only one who feels this way and frankly, I get tired of sandwiches for lunch over and over again.

Here are two of my favorite lunches to bring to work: they are delicious, filling meals that are healthy and inexpensive. The best part? They only require 3 ingredients each!!

1. Boil the pasta.

2. In a lightly oiled skillet on medium heat, pour the Seafood Blend and cover. It should only take about 5 minutes for the seafood to cook.

3. Once the Seafood Blend is cooked, drain. In a small saucepan, heat the Arrabiata sauce and place the Seafood Blend into the sauce to give it more flavor.

4. Scoop the sauce with seafood over the pasta. Garnish with parmesan and basil if desired.

Note: Arrabiata sauce is a bit on the spicy side but this dish would work great with any tomato-based sauce!

1. Cook the chimichurri rice according to the instructions on the package. This is one of my favorite Trader Joe’s items because it takes about 4 minutes to make and is delicious.

2. Saute or oven roast the tomatoes, depending on your schedule and taste preference. I like {oven roasting} more but that takes about 45 minutes to an hour.

3. Thaw out frozen shrimp in water and drain.

4. Combine ingredients and you’re done!
