Remember rosé? Last summer’s “it” wine was everywhere, except when it was running dangerously low in the Hamptons. Oh, the HUMANITY!
In a vain attempt to recapture the spirit of warmer weather + get spring to hurry up, I left Trader Joe’s last weekend with a favorite bottle of rosé and a five-stem bunch of fragrant hyacinth. I love having hyacinth in a vase on my bedside table, the fragrance is so calming and practically guarantees I’ll wake up with a smile!
With the rosé + spring, I took a “If you drink it, they will come” logical approach. Think of it as a rain dance. But with rosé. A rosé dance.
Thankfully, you don’t have to wait until spring and summer to enjoy this rosé fizz cocktail! It’s perfect for a Galentine’s Day brunch or as a romantic cocktail to surprise your significant other on the 14th.
You really can’t go wrong with tart raspberries + cool mint leaves hanging out. Good things happen when they do, guys. Because science.
I used Incanto Sparkling Rosé, which is a steal at Trader Joe’s for $7, but if you have regular rosé, just add a splash of Prosecco to give the rosé fizz cocktail its fizz. Life is really good.
Now how many days until summer?
Ingredients
1 bottle sparkling rosé
Mint leaves
Raspberries
Directions
In a chilled champagne flute, place 2-3 mint leaves and 3 raspberries.
Fill with sparkling rosé.
