Ready for some information that will guarantee your summer is the best one yet? You can make homemade watermelon juice with just your blender or, in my case, my culinary boyfriend: the immersion blender. Yup, all you do is slice the watermelon up into bite-size pieces and blend until smooth. Strain through a sieve to remove any seeds and voila, a big batch of watermelon juice that you can drink straight.
Or, you could always add rum to it. Just sayin’.
Which is exactly what I did over the weekend to go with my chili-lime salmon tacos with watermelon salsa. In the summertime with all the humidity, you really just want a fresh, cold drink to make you forget how you felt like a melting popsicle after stepping out of your office. I’ve always loved mojitos with their cool mint and zesty lime flavors and I had all the ingredients so it just had to happen. It was meant to be. Kismet.

- Handful of mint leaves
- 2 tsp sugar
- Juice of 1 lime
- Ice
- 1 shot of clear rum
- 1 cup watermelon juice
- Muddle mint leaves, sugar and lime juice.
- Add ice, rum and watermelon juice. Stir to combine
