If you read yesterday’s post, you know how much {I am loving pistachio} for spring! After all, the pistachio is one of my favorite snacks…pistachio ice cream, on the other hand, I can live without just fine.
But a pistachio cocktail? While it does involve pistachio ice cream, there is chocolate syrup. And you really cannot go wrong with a recipe calling for chocolate. This delicious recipe was created by Christie of {Food Done Light} and she also took the lovely photograph.
Ingredients
1/2 cup pistachio ice cream
1/2 ounce Bailey’s
1/2 ounce Kahlua
1/4 cup milk
chocolate syrup
pistachios for garnish
Directions
In a blender, combine the ice cream, Bailey’s, Kahlua and milk. Blend until smooth.
In a martini glass, swirl the chocolate syrup.
Grind the pistachios.
Pour blended mixture into martini glass.
Top with pistachios.
