Ten Minute Lunch

Well, this morning was a little rough rolling out of bed. I was so swamped with work last night that I stayed up past my bed time & did not have the time to even think about packing a lunch for today. However, I do have several no-fuss meals that I keep up my sleeve for those days when I feel more like a zombie in pearls than a girl!

This dish combines all the aspects I require in a meal: vegetables, protein, some carbs and (of course), a zing of heat. Plus, it takes all of 10 minutes to prepare, from opening the bags to putting the meal in my Tupperware.

Preparation: 

1. Slice 1 bell pepper into small strips & saute until soft.

2. Meanwhile, place a microwave-safe dish of Trader Joe’s Chimichurri Rice in the microwave & follow heating instructions (no more than 7 minutes).

3. Cut up Trader Joe’s Pre-Cooked Jalapeno Chicken Sausage. You can heat this up by microwave, stove top, your preference.

4. Combine all ingredients and if you’re a hot sauce fiend like myself, add a dash or two of Trader Joe’s Jalapeno sauce. However, for those who don’t like spicy food, all ingredients (except the bell pepper) are spicy.

Yum!

 It might not be the prettiest looking lunch but it fills you up and is quick to make when you’re low on time.
