On New Year’s Eve morning, I dragged my sniffly self to Trader Joe’s to get the ingredients for potsticker soup stuff. Long line. Piles of champagne and wine in people’s carts. Oh god, it hit me. It was New Year’s Eve. Champagne. GO GO GO!
With the stealth of a ninja, I ran to the wine section. I was practically a Broadway dancer doing some fancy footwork to get to the wines. Cannot stress this enough: People. Everywhere.
And then I blacked out from adrenaline and before I knew it, there were 4 bottles of Prosecco in my cart. It was the heat of the moment and a crippling fear of Trader Joe’s running out of champagne. You know those news stories you see about people fighting over Twinkies when they were discontinued? I always was incredulous, wondering who these crazy people are. Now, I get it.
New Year’s Eve came and went and I had a good amount of Prosecco left. Bellinis, check. I needed to come up with another cocktail.
Last Friday, I went to get drinks with a friend at Beuchert’s. I’ve walked by Beuchert’s hundreds of times and I always wanted to go. My only regret was not going sooner. If you appreciate an expertly crafted cocktail, go to Beuchert’s. A wide variety of bitters sat on the bar next to bowls of fresh lemons and citrus just ready to be peeled and popped into a drink.
I ordered a French 75 (Okay fine, you got me. I ordered two) and while I’m normally not a big gin person, gin + citrus is a winning combination in my book. Top it off with a dash of Prosecco and life is good.
HEY! I was looking for a Prosecco cocktail. The cocktail gods smiled down upon me. But I wanted to give this citrus cocktail a little twist.
I decided to create a version of the classic French 75, Skinnygirl Cocktail style. For the vibrant citrus flavors, I used Skinnygirl Meyer Lemon Vodka + freshly squeezed grapefruit juice. Oy vey, we’re really going to have toned arms in 2015 with all this squeezing!
And have I mentioned Prosecco is one of the lowest calorie wines per serving? All the more reason to keep this bubbly fest going into 2015! If it helps my thighs, I guess I’ll drink Prosecco. Oh the humanity!
Ingredients
1 grapefruit
1 lemon
2 ounces Skinnygirl Meyer Lemon Vodka
Prosecco
Directions
Grab your tickets to the gun show because it’s time to squeeze! Squeeze the grapefruit over a bowl to collect the juice. It’s kinda important.
In a chilled champagne flute, pour in the Skinnygirl Vodka (Just over one shot glass’s worth). Add the grapefruit juice and top with Prosecco. Rub the lemon slice around the rim of the glass and serve.
