Quick and Easy Sweet Brown Rice Breakfast
This has been one of my favorite breakfasts for years and years now and I honestly cannot believe I haven’t shared it until now. I cycle through different breakfasts. I will eat the same breakfast for weeks or months and then will suddenly switch to a new breakfast and repeat the cycle. We just finished our bagel era and now thanks to the chilly winds I’m in my sweet brown rice breakfast era.
I love how satisfying this breakfast is. I’ll be honest, sometimes oatmeal can leave me feeling a bit bloated. Subbing brown rice in for meals where I might’ve reached for oatmeal leaves me feeling full (but not too full) and energized to get my day going!
The best part about this recipe is it’s really a blank canvas for your tastes. The brown rice bowl is your oyster! You just need brown rice and your favorite milk and you can adapt the rest to your tastebuds and your pantry. I’m sharing what I prefer in mine but go ahead and make this your own!
Make this breakfast your own but I strongly suggest you use Trader Joe’s frozen brown rice for this dish. The brown rice takes about 3 minutes to make in the microwave, let it stand for a minute, and you are ready to go! It also makes it super easy to prep breakfast for the week ahead. Just add the brown rice and milk combination to the bowls and add the rest of the ingredients later.
Brown Rice Breakfast Recipe
Ingredients:
1/2 cup Brown Rice, Cooked
Your Favorite Milk (I use Trader Joe’s Unsweetened Almond, Cashew, and Macadamia Milk)
Dried Cranberries
Crushed Walnuts (Or your favorite nuts, almonds and pistachios would be great here)
Agave Syrup (You can also use honey or stevia)
Cinnamon
Directions:
Spoon the prepared hot brown rice into the bowl.
Pour your choice of milk over the rice until the rice is nearly submerged. (Note: If you’re preparing ahead, this is where you heat in the microwave for about 45 seconds)
Add a sprinkle of dried cranberries and a handful of crushed walnuts.
Drizzle with sweetener and dust with cinnamon.
