Okay, I’m officially hopping on the smoothie bowl trend bandwagon. I’d seen these beautiful creations pretty much every morning as I scroll through Instagram each morning in bed but chalked it up as the food porn version of the flat lay shot. Sure, they look pretty with all the toppings but why not just have a regular old smoothie?

I get it now.

Originally, I planned to make this post a simple peach crumble smoothie to satisfy a rather strong peach craving I had over the weekend. Fruit crumbles are always a winner in my book, I love using rolled oats whenever possible. I consider oatmeal raisin cookies to be the unsung hero of the cookie world. So into my peach crumble smoothie bowl go rolled oats! Trader Joe’s Rolled Oats is a pantry powerhouse for me, I use it practically every day to make overnight oats for breakfast. It’s gluten-free and wheat-free for anyone with food sensitivities. And for $4, this bag of rolled oats will last you for weeks. Happy stomach, happy wallet.

I blended up frozen peaches, rolled oats, almond milk, a dash of cinnamon, a pinch of sea salt and a drizzle of agave to sweeten it up. In my teeny kitchen, I don’t have room for a blender so I reach for my immersion blender (AKA hand blender) when whipping up smoothies. I swear by my Cuisinart immersion blender.Smoothie bowl pro tip: Don’t blend as thoroughly as you would for a smoothie, you want it to be a thicker, chunkier consistency.Once all your ingredients are blended, instead of reaching for a tall glass and a fun straw, pour your fresh peach smoothie into a bowl and grab a spoon.

But wait.

While I’m all about the crazy straws with my smoothies, smoothie bowls have their own fun, silly component. And you can this component! I’m talking, of course about the toppings.

You can choose whichever toppings make you feel inspired and ready to start your day. I went with almonds, peaches and more of those rolled oats because I can’t get enough! Honorable mention: Chia seeds. Don’t worry, I promise your toppings will float!

Ingredients
  • 1½ cups frozen peaches
  • ½ cup almond milk
  • ¼ cup rolled oats
  • ½ tsp cinnamon
  • Pinch of sea salt
  • 1 tbsp agave nectar
  • Garnish Options: More rolled oats, fresh peaches, almonds or chia seeds
Instructions
  1. Blend all ingredients until the consistency is thick and chunky.
  2. Garnish with whatever toppings speak to you!
Notes
And in case I haven't convinced you to join the smoothie bowl train, you can make an awesome batch of peach crumble overnight oats with these ingredients. Just up the ¼ cup of rolled oats to ½ cup, thaw the frozen peaches and add a tablespoon of chia seeds. In a sealable container (like a mason jar), combine all ingredients and stir to mix thoroughly. Let sit in the fridge overnight and grab 'n go in the morning!
