Happy Mardi Gras!! It’s the day to let loose and go crazy before the Lenten season kicks in. And by crazy, I mean have some wine and maybe eat cookie butter straight out of the jar with a spoon. Or you can whip up these incredibly easy beignets with Pillsbury biscuits! Seriously, give it a whirl – they’re life-changing. Fried dough plus confectioner’s sugar = YUM.

Once Ash Wednesday kicks in, so do no-meat Fridays. Growing up, my family would always pick up a fish fry dinner on Fridays during Lent. A big piece of fried fish, macaroni salad, cole slaw and French fries. It was an amazing feast and I’m seriously craving one right about now. I’m still on the hunt for a fish fry spot in DC but I have a number of meatless meals in my recipe book to make over the next 40 days. Even if you don’t observe meatless Fridays, these are some pretty delicious meals if I do say so myself!
