Guys, forget about finding the leprechaun’s pot of gold at the end of the rainbow.
Because this bowl of gold is MONEY.
We start with the corned beef hash because there’s really only one way to make breakfast potatoes more incredible than they already are and that’s by adding corned beef.
I mean, I’m not going to stop you from adding crispy bacon to the hash the rest of the year but for St. Patrick’s Day it’s corned beef or nothin’.
Funny enough though, I always associate corned beef hash with Christmas morning. My cousin Mike + his family has everybody over and, in case we weren’t in a total food coma from the feast of pierogis and ham the night before, we eat waffles topped with whipped cream and corned beef hash until we can barely move. And then avoid mirrors and non-stretchy waistbands until New Year’s.
But real talk: corned beef hash + Guinness hollandaise is the perfect meal for post-St. Patrick’s Day festivities. It has everything you could possibly need to combat a night of Irish Car Bombs:
Carbs? Check. Protein? Check. Hair of the dog? Check!
Drizzle the Guinness hollandaise onto your corned beef hash and your corned beef hash bowl might just joyfully exclaim, “Top o’ the morning to ya!” Or it might be you talking to yourself because of how darn good this breakfast is.
If you sacrifice a half cup of your Guinness in the name of hollandaise, I promise you you will be rewarded tenfold. But if you’re still upset about losing the half cup, pour yourself another Guinness. It’s St. Patrick’s Day, after all!!
And even if you’re more into celebrating the Holy Day with The Irish Tenors or even Lord the Dance (Woah, haven’t thought of them since last millennium), I think we can all get behind it a love of carbs for breakfast.
And lunch. And dinner.
I could eat corned beef hash all day. I don’t even add ketchup to it and being a person who puts ketchup on her ketchup, that’s saying a lot.
Garnish your corned beef hash bowl with minced green onion because everybody has to wear green on St. Patrick’s Day! Even your breakfast.
Making this dish practically guarantees you’ll get a kiss, whether you’re Irish or not so you are welcome ; )
Corned Beef Hash Ingredients
3 tablespoons butter
3-4 medium gold potatoes cubed
1/2 lb pre-cooked corned beef (I picked mine up at Trader Joe’s, $13 for 1 1/3 lb)
Paprika
Minced green onion for garnish
Directions
1. Chop the potatoes and rinse well with cold water.
2. Cook the corned beef according to package instructions. The Trader Joe’s brand came pre-cooked and only required it to be heated in the oven for 25 minutes.
3. Melt butter in a skillet on medium heat.
4. Add the potatoes and toss to evenly coat with melted butter. Turn the heat down a notch and cover skillet with lid. Let it sit for 10 minutes, stirring occasionally. Add desired level of paprika and stir to evenly coat.
5. Once the corned beef is done, let it cool for 2-3 minutes and then slice into bite size pieces or shred it with two forks. Add to the potatoes and toss to combine. Heat the potatoes for another 7-10 minutes or until tender. Garnish with minced green onion.
Guinness Hollandaise Ingredients
3 egg yolks
1 tablespoon water
1 tablespoon lemon juice
1 stick unsalted butter (1/2 cup)
1/2 cup Guinness
Directions
1. Whisk egg yolks, water and lemon juice together in a saucepan until it becomes thick.
2. Place the saucepan over low heat and continue to thoroughly whisk. Once the mixture thickens and increases in volume, add the butter and remove from heat. Add the Guinness and continue whisking away until you reach your desired consistency.
