I had a very low-key Sunday. I went to Corepower C2 in the morning and read for a bit on my couch. I’m reading The Matriarch, Barbara Bush’s biography by Susan Page, and I’m loving it. The first chapter about losing her 3 year old daughter to cancer left me bawling. I’ve always loved the First Ladies and their significant contributions to our government and society. I’d highly recommend this book so far! It’s especially compelling since I just finished Becoming by Michelle Obama, which I couldn’t put down.
My friends invited the group over for a BYOB grill-out. Since it’s officially rosé season, I picked up a bottle at Trader Joe’s along with the ingredients for a chopped Greek salad. It’s such an easy side dish to make and I love adding grilled chicken to make it a complete meal. Perfect for those hot summer days when you don’t really feel like cooking and want something light but filling for an al fresco dinner. I cannot wait to take advantage of my apartment’s rooftop for summer dinners!
It’s been awhile since I’ve done a recipe post and honestly, there isn’t really a recipe for chopped Greek salad 😬But I love my red wine vinaigrette, it works so well to lightly dress summer greens and also is wonderful for pasta salads, especially if you add it to the pasta salad, toss, and let it chill in the fridge for an hour.
I follow this vinaigrette recipe and just substitute different acids, making salad dressing is SO simple with this equation and tastes so much better than store-bought. I seriously can’t remember the last time I bought salad dressing from the store.
- Trader Joe's Plum Tomatoes, chopped
- 1 yellow pepper, diced
- 4 English cucumbers, chopped
- Crumbled feta, ½ container
- ½ jar, kalamata olives
- Red wine vinegar, 2 tbsp
- Olive oil, 2 tbsp
- Sprinkle of oregano
- Chop tomatoes, cucumbers, and yellow peppers into bite size pieces.
- Place into medium size bowl
- Add ½ container of Trader Joe's Feta container
- Add ½ of drained jar of kalamata olives
- In a bowl, mix to combine. Add the vinegar, olive oil, and oregano. Toss to combine again. Chill for 1 hour.
