Chicken & Veggie Quesadilla

I absolutely love Mexican food, I could seriously eat it every day! I thought I’d share this recipe with you for an easy chicken & veggie quesadilla:

Ingredients: (All from Trader Joe’s)

– Habanero-Lime Tortilla

– Grilled Chicken Strips

– Tomatoes on the Vine

– Mexican Cheese Blend (Packaged)

– Frozen Red, Yellow & Green Chopped Peppers

– Salsa

Preparation: 

1. Cook the frozen peppers in a skillet. While you heat up the peppers, place the package of grilled chicken in the microwave, heat for 3 minutes. Chop up the tomatoes into bite size pieces.

2. In another skillet on medium heat, place tortilla with sprinkled cheese on top. Wait until cheese is slightly melted and then add the peppers, chopped tomatoes and a dash of salsa.

3. Using a spatula, fold the tortilla in half and press down with the spatula. Wait several minutes and then flip the tortilla over to evenly heat on both sides.
