In case you didn’t get the memo, I am a free woman & officially on winter break. Now, my life is done with group meetings, group projects, papers and exams!! What am I doing with my life now that that’s done? Well, I am tying up loose ends in D.C. before I go home for a month. And that includes taking care of my food cabinet. This afternoon, I laid out my perishable food items on the counter and decided what I was going to make with them. As it turns out, my kitchen creativity worked out really nicely so here is my meal, all ingredients courtesy of my boyfriend, Trader Joe.
I started off by marinating a chicken breast in Trader Joe’s Tuscan Italian dressing for an hour. I used a sharp knife to puncture the chicken breast to allow the marinade to get into the meat.
While the chicken was marinating, I sauteed the bell peppers & tomatoes (in separate skillets, of course):

While this was going on, I started cooking the marinated chicken in the skillet and boiling pasta. After cooking the chicken, I added it to my pasta bowl with the veggies, added 2 spoonfuls of pesto and voila:
