Though I’ll be honest, sometimes I think Trader Joe’s is trying to milk this cookie butter thing for all it’s worth. Like the High School Musical of awesome cookie spreads. Or Fast & Furious.

I’ve made cookie butter ice cream, and while left unsupervised (ALWAYS a bad idea), a cookie butter bourbon milkshake. But my favorite cookie butter recipe was the simplest. With a spoon. Straight to the face.
Until this one ingredient changed the cookie butter game.

- ½ cup Pumpkin Pie Spice Cookie Butter
- 1 tbsp Coconut Oil
- In a medium saucepan over medium-low heat, whisk the cookie butter and coconut oil until thoroughly melted and combined.
- Let the mixture cool to room temperature.
- Drizzle over the ice cream, it will immediately harden.
