If I can brag for a minute, I’m actually pretty impressed with this mojito popsicle recipe. I’ve tried a few different versions of boozy popsicles but never got the portions right. Well, by jove, this time I did it!! This mojito popsicle recipe will give you popsicles that are perfectly minty with a hint of lime and the best part? You can taste the rum!

Science class time: Alcohol doesn’t freeze so getting the right amount of rum in this mojito popsicle was actually make or break (or in this case, not freeze). But what’s the point of a mojito popsicle if you can’t taste the rum?!

These are the questions that keep me up at night.

Ingredients

1 cup white sugar

2 cups water

~20 mint leaves

Juice of 2 fresh limes

1/4 cup clear rum

1 cup lime sparkling water

Directions

1. In a saucepan over medium heat, add the water and sugar. Whisk together until sugar is dissolved. Bring to a boil and then reduce to medium-low heat and add fresh mint leaves. Let simmer for 5 minutes.

2. Strain the simple syrup into a bowl and discard the mint leaves. Place in the fridge to cool.

3. In a medium bowl, add the lime juice, rum and lime sparkling water. Stir to combine. Once the mint simple syrup has cooled to room temperature, add to the mixture.

4. Pour the mixture into the popsicle mold. Note: For fancy blog photos, I added mint leaves and lime slices for garnish. If you are making these popsicles for a party, I’d suggest ditching the mint leaves. They’re photogenic but not practical for a party.

5. Place in the freezer for at least 4 hours.

6. When you are ready to serve, I filled a large serving dish with warm water and placed the popsicle mold into the dish for about a minute to loosen the popsicle from the mold. No popsicles were harmed during this process.

P.S. I used this popsicle mold and it worked perfectly!
