I remember my first bellini quite well. I was at brunch with friends in Paolo’s in Georgetown (if you haven’t been, I highly recommend adding it to your list – fresh breadsticks and eggplant tapenade, be still my taste buds) and decided to abandon my beloved mimosa because I was seduced by the idea of peaches + bubbles promised in the bellini.
Well, my bellini arrived and after the first sip, I could hear a hallelujah chorus in my head. Now whenever I go to brunch and spy the beautiful bellini on the menu, it’s game over.
This week has been extra hot and humid by DC’s standards and nothing sounded better than a cool, peachy-sweet bellini. I whipped up a batch of bellini mix all set for Saturday morning. The recipe is simple and you can store in a mason jar or a beautiful glass to bring to a friend’s BBQ (like I did last weekend) or give as a gift.
