Sharing a copycat cat recipe for Trader Joe’s Wine Country Chicken Salad – perfect with chilled wine for a summer meal
In late summer, the last place I really want to be (besides outdoors in the heat) is in the kitchen. I swear even the thought of turning on the oven has me ???? I find myself gravitating toward chilled salads like this panzanella salad with halloumi.
The beauty of this Trader Joe’s Wine Country Chicken Salad copycat recipe is that once you cook the chicken, the rest of the recipe is just chopping and dicing and chilling in the fridge. This dish lasts for several days in the fridge and honestly tastes better the next day as the flavors have time to mesh together.
It’s perfect over greens for a lighter lunch or rolled into a tortilla to make a wrap – and even better with a chilled glass of rosé!
Ingredients:
2 chicken breasts
1 cup Greek yogurt
2 tbsp red wine vinegar
1 tbsp Dijon mustard
Salt + pepper
Seedless red grapes (sliced)
Celery (diced)
Dried cranberries
Walnuts (Crushed, can also use pecans)
Directions:
- Prepare chicken breasts + dice cooked chicken into bite-size pieces.
- Now it’s time for the dressing! In a large bow, mix the Greek yogurt, red wine vinegar, Dijon mustard, salt + pepper. I also added a drizzle of honey to balance out the tartness of the yogurt and red wine vinegar.
3. Combine the chicken + dressing, let sit in the fridge for up to 3-4 days.
