In my attempt to cure my food hangover from this weekend’s delicious meals, I’m working on eating healthier to get my body back on track. Today, I packed my lunch: I had a salad with romaine lettuce, tomatoes (I bought them fresh off the vine) and grilled chicken strips. All of the ingredients were purchased at Trader Joe’s, shocking I know. For me, I love adding grilled chicken to salads because the protein in the chicken fills me up without feeling stuffed. Plus, it adds another dimension to the salad and makes it look festive! I topped off my salad with Trader Joe’s Tuscan Italian dressing, it tastes like a more flavorful balsamic vinaigrette.
