Happy Cinco de Mayo! Time to put on a favorite sundress and sip margaritas while nibbling on guacamole. When I was a little girl, I never ate guacamole because the green hue just threw me through a loop. My childhood eating suspicions were very strong against guacamole…until the day I tried it. And I haven’t looked back.
Entertaining for Cinco de Mayo is extremely easy: you could compile a “make your own taco” bar and set up a margarita station in the kitchen. However, if you’re looking for another option, you are 20 minutes away from taquito-lada casserole!
Ingredients
Mexican Cheese Blend
Green Onions
Trader Joe’s Taquitos (of your choice)
Enchilada Sauce
Black Olives
Green Chiles
Refried Beans
Fresh Tomato
Directions
In a casserole dish, place the taquitos.
Cover the taquitos with the enchilada sauce (I used about half of the jar), chopped up black olives, chiles and refried beans.
Pre heat the oven to 425 and then place the dish in the oven for 20-25 minutes.
When you take the dish out of the oven, sprinkle the Mexican Cheese Blend on top and I added chopped up fresh tomatoes.
