Last weekend, I strolled around Eastern Market (a fantastic farmer’s market for my non-DC readers) hoping to be struck with inspiration. Peaches were delicious but I wasn’t in the mood for peach cobbler. As I eyed up the fresh basil with vague hints of homemade pesto, I caught sight of the most gorgeous, vibrantly red strawberries ever. It was a done deal at that very moment that I was going to make a strawberry crumble by hook or by crook. These strawberries were just begging to jive with sugar ‘n rolled oats.
I also had the idea to make a strawberry-rhubarb crumble but that just wasn’t in the cards. I didn’t think about rhubarb until after I left the farmer’s market and when I went back the next day, there was no rhubarb in sight. And Trader Joe’s didn’t have any currently in stock. Alas.
I turned to my girl Martha for her strawberry crumble recipe and I must say, girlfriend really knocked it out of the ballpark with this recipe. Where it calls for rhubarb, I just doubled the strawberries to keep the balance. Sweet strawberries and a pleasantly sugary crunch are just what the doctor calls for to ease into the work week. Add a spoonful or three or four of vanilla ice cream to top of the crumble and you will be sitting pretty. Warning: You will want to go back for second helpings…I’m contemplating making it my breakfast. There’s fruit so it’s healthy, right??
