As promised, I am branching outside of pastas for my weekly adventure in the kitchen. I am also going to try to make recipes that are more waistline-friendly as we all work to get ready for sundresses and swimsuits. This week is not that week.
When I spied “Steamer Clams” in Trader Joe’s frozen section for a mere $5.00, I knew I had to get them and feature them as the week’s recipe. After some sleuthing, I found a recipe for a butter sauce and I’ll be honest, I would use about half of what the recipe called for because my sauce to clam ratio ended up skewing heavily in the sauce’s favor. But not in favor for me. The recipe still came out delicious but follow these proportions and we’ll all be happy as clams 🙂

IngredientsÂ
1/2 stick of butter,
1 container, Trader Joe’s Steamer Clams
1/2 yellow onion, chopped
1/3 cup shallots, chopped
2-3 garlic cloves, chopped
1 cup cherry tomatoes
1/2 tsp thyme
1/2 cup chardonnay
salt & pepper to taste
DirectionsÂ
In a skillet, slowly melt the butter. Once melted, toss in yellow onion, shallots and garlic.
Let simmer.
As it starts to bubble, toss in the cherry tomatoes. I added more than just 1 cup because I love tomatoes so much!
Meanwhile, prepare the TJ’s clams as directed on the box (You carefully place into a deep saucepan and let simmer, covered, on medium heat for 8 minutes).
Add the thyme and chardonnay. Let the chardonnay reduce.
Salt and pepper to taste.
Once the clams have reached their 8 minutes, let sit for 2 minutes.
Serve with the sauce drizzled over the clams and with a side of sourdough bread.

Those Trader Joe’s clams are great! I use them all the time for an easy weeknight dinner.
