I’ve never been much of a breakfast person. Don’t get me wrong, I love breakfast foods but I can’t even think about eating breakfast until at least an hour after I wake up. It’s been this way as long as I can remember. My aunt still teases me about having to chase me with an Eggo waffle down the driveway to the school bus. I don’t dispute the importance of breakfast or question its standing as the most important meal of the day. I just need my breakfast to have a certain portability factor.
In the last few years, I’ve gone between smoothies (like this Peach Crumble Smoothie) and overnight oats (PB+J is my favorite combo) with the occasional Kind bar thrown in the mix here and there. I’d seen beautifully arranged acai bowls and read about the superpowers the acai berries have but dismissed them as a) Too expensive and b) No place between my apartment and office building is going to have acai bowls. So I double-tapped the artistic rainbow creations on Instagram and went back to my smoothies and overnight oats. Until the other week at Trader Joe’s.
I was on my weekly pilgrimage to Trader Joe’s and in the midst of tossing frozen fruits into my cart, spied these frozen acai packets. NOT A DRILL, PEOPLE, NOT A DRILL. For $4.50, into my cart they went. I’d never tried acai and had no idea if I’d like them or not but figured why not. I was getting kinda tired of my breakfast game, acai bowls could bring my game up.
Lo and behold, acai bowls lived up to the hype. I blended my acai bowl with my #1, the immersion blender, in less than 5 minutes and it stayed perfectly in the fridge to grab ‘n go the next morning. I topped it with chia seeds, sliced bananas and shredded coconut for some extra crunch. This might sound strange but I need to be able to chew or else I won’t really feel full. Go crazy with your toppings! Granola or whatever fresh fruit you have lying around would be perfect. Sky’s the limit! Plus, this gives you a chance to play with your food styling skills. Do it for the Insta.
- 1 packet, Trader Joe's Frozen Acai Puree
- 1 cup, spinach
- ½ cup, frozen mango
- ½ cup, light coconut milk
- 1 drizzle, agave (Optional)
- Toppings:
- Chia seeds
- Sliced banana
- Shredded coconut
- Blend all ingredients until smooth. Pour into bowl and garnish with toppings.
