Thirsty Thursday: Pineapple Lime Margarita

Did you know that today is National Tequila Day?!?! It’s true, there’s an entire day dedicated to the liquor behind your favorite margaritas. Let’s kick off this special edition of Thirsty Thursday on the right foot. CUE THE MUSIC!

Over the weekend, I had a couple gal pals over for a gabfest fueled by margaritas + chips with guac + salsa. I could probably eat Mexican every single day and serrano salsa and reduced guilt guac are frequent flyers in my Trader Joe’s shopping cart. If we’re being honest, I’m resisting digging into some chips + salsa as I write this post. IT’S JUST SO GOOD!*

And I might have an avocado addiction. According to webMD.

But never fear, these margaritas might actually be healthy and the guacamole skinny. It’s the miracle of National Tequila Day!

Pineapple Lime Margaritas (Creates 8) 

Ingredients

1 bottle, Sauza 100% Blue Agave Tequila

1 bottle, Blue Agave Sweetener

Pineapple Juice (I used two four-packs of Trader Joe’s all natural pineapple juice)

1 lime, juiced

Salt (optional)

Directions

Mix all ingredients into a pitcher and stir to combine.

To salt the glasses’ rims, rub the used lime wedge along the rim. Place salt onto a small saucer and rub the rim in the salt.

Skinny Guacamole (as prepared by Caroline)

Ingredients 

2 large avocadoes

1 lime

Directions 

Slice the avocado into a bowl if you prefer your guac on the chunky side.

Squeeze lime juice over the avocadoes.
