It’s hard to believe it’s September 1st (Hogwarts Express, anyone?) and it’s the final countdown to the end of Summer 2015.
I’ve heard this winter is supposed to be a doozy (read: get some Bean boots while you can) so I’m trying to spend as much time outside as I can and soak up the summer sun. Lately, my favorite dinner companion is a book + a glass of sangria for a dinner al fresco.
Side note: Has anyone read (or currently reading) The Night Circus? I’m about 100 pages in + I can’t stop!
Quinoa has made a major comeback in my life + eating habits recently, thanks to a pantry inventory…I was becoming an at-risk quinoa hoarder.
Quinoa bowls are a wonderfully blank canvas to add market veggies, protein +fresh herbs to create a healthy, flavorful meal in minutes. Perfect for evenings when you just want to be outside with sangria + friends!
Mediterranean Quinoa Bowls + Beso Del Sol Sangria. YES!
Oh yeah, this isn’t your college boxed wine.
Beso Del Sol’s Red Sangria is delicious: it’s sweet, fruity + totally refreshing. I’m normally not a red wine girl but this sangria has me singing a different tune. And reaching for more reds!
Add some ice cubes to wine glasses + top off with red sangria + an orange slice. And you’re in business!

There’s no exact recipe for a Mediterranean quinoa bowl, you build it to make you + your tastebuds happy. For me, personally, here’s my rhythm:
- 1/4 cup, cooked quinoa
- 1 tomato, chopped
- 1/2 grilled chicken breast, chopped (To make it easier, I love Trader Joe’s Grilled Chicken Strips)
- Depending on produce: 1 sautéed zucchini + chopped cucumbers
- Spoonful of Trader Joe’s Spicy Hummus
- Spoonful of Cava Foods Harissa
- Spoonful of Tzatziki
With the sangria + Mediterranean quinoa bowl, the score is You: 2, End-of-Summer: 0.

Yum yum yum! I love everything about those post! I’ve never tried to make a quinoa bowl at home, but it reminds me of how I dress up my bowls at Cava Mezze. Gotta check out that sangria too!
