Because this happens. When you were a kid did you beg your parents to pick up your favorite cereal at the grocery store? You might even have gone so far as to sneak that cereal into their cart and pray they didn’t notice until it was too late. I went through too many favorite cereals to count as a kid – Cookie Crisp, Cinnamon Life, Reese’s Puffs, to name a few – but Lucky Charms always was in the top contenders. I mean, there were MARSHMALLOWS in the cereal?!?! What could be more magical than that to a 6-year-old? Pun intended. Nowadays, as an adult (sort of) I try to keep my breakfast more on the healthy side and typically either blend up a green smoothie or the night before, I’ll prep my new obsession – overnight oats. I never liked oatmeal as a kid but overnight oats are where it’s at. Loaded with chia seeds, rolled oats, non-dairy almond milk, overnight oats are an awesome blank canvas to create a tasty and filling breakfast that’ll keep you full until lunch. Usually, I add in a spoonful of peanut butter or some frozen berries. But for St. Patrick’s Day, I wanted to create something special. So without further ado – Lucky Charms Cereal Milk Overnight Oats!!!

Partially inspired by Milk Bar’s famous cereal milk, I wanted to do a grownup (Using that term loosely) take on a childhood favorite. And Lucky Charms Overnight Oats was the happy, delicious medium between my 6-year-old and 26-year-old selves.
The great thing about overnight oats is that they’re an easy lift for those on the go. Once you assemble the ingredients into a jar with a sealable lid, you simply toss in the fridge and let it sit overnight. Low-maintenance, high-flavor.

Side note: This is now my all-time favorite recipe post to create and shoot so I hope you enjoy these pictures as much as I did shooting them!
- 2 cups unsweetened almond milk
- 1 cup Lucky Charms cereal
- 1 cup rolled oats
- 1 tbsp chia seeds
- Lucky Charms marshmallows for garnish
- To create the cereal milk, pour the almond milk and cereal into a bowl, making sure the milk completely covers the cereal. Let sit for 25-30 minutes. Strain through a sieve to remove the cereal. Set aside.
- When you're ready to assemble the overnight oats, place rolled oats and chia seeds into a container with a sealable lid. I prefer to make my overnight oats in mason jars. Pour 1 cup of the cereal milk and stir to combine.
- Secure the lid on the mason jar tightly and let sit overnight in the fridge or about ~6 hours.
- Top with Lucky Charms marshmallows.
