A delicious recipe for low carb zucchini lasagna – I love this for meal prep to have meals ready throughout the week!
Lasagna is an ultimate comfort food for me. Pasta, sauce, cheese. There’s nothing better. Lasagna is a little tricky though when you’re cooking for one person and your willpower around lasagna is the equivalent of Garfield’s willpower.
I made this low carb zucchini lasagna to have for dinner throughout the week and I need to do this more often. Usually I’m a short order cook for one when it comes to dinner. But having dinner ready-made at the end of the day all set and just needs to be heated up…I need to be better about doing this more often. Because this dinner and leftovers were ????????
Ingredients
1 lb lean ground beef
3 medium zucchinis, diced
1/2 container skim ricotta cheese
1 cup of your favorite pasta sauce
1 cup, shredded mozzarella cheese
Oregano, basil, salt + pepper
Shaved parmesan
Directions:
- Preheat oven to 400 degrees.
- In a skillet, heat oil over medium heat. Cook the ground beef, seasoning with oregano, basil, salt, and pepper.
- In a large bowl, add the diced zucchinis, cooked ground beef, ricotta, pasta sauce, and mozzarella. Mix together.
- Spread into a casserole dish and top with shaved parmesan.
- Bake for 25 minutes.
- Optional: Garnish with fresh basil.
