Hey all, remember me? Work took over this week and to be honest, after coming home I just didn’t have the energy to write a post. My days went like this: Work –> Home –> Make Dinner –> Fall Asleep By 10. Yes, 10. At one point this week, I fell asleep at 9:30. I couldn’t tell you the last time this happened. But I just wanted to say hi and let you know that all of this week’s content has been scheduled and ready to go next week! In the mean time, here are some highlights from the week:

CookingI started my 28-Day Reset on Wednesday. No dairy, gluten or alcohol for 28 days. For quick dinners, Trader Joe’s Frozen Cauliflower Rice has been clutch. I sautéed Brussels sprouts that I chopped last weekend with a little bit of coconut oil and then once the sprouts began to brown, add the cauliflower rice and heat thoroughly. I then season it with salt, pepper, and red pepper flakes. Other nights, I seasoned it with my extra-spicy Cajun seasoning and added an chopped avocado. Variety’s the spice of life, right? My Trader Joe’s always seems to be sold out of Frozen Cauliflower Rice so when you go, be sure to stock up! This is a serious life-saver to putting together a quick, healthy meal.

Coveting: J.Crew x New Balance collaboration has me seriously dying. I mean, these navy striped workout pants? Major heart eyes emoji. The prices are a little steep for what I normally pay for clothes that I sweat in…but J.Crew does have a few more reasonably priced options in this collection like racerback stripe tank that’s $35 (Currently 25% off with code SHOPNOW)!

Loving: My love of BaubleBar is pretty well-documented on the blog. It’s my favorite spot to pick up statement jewelry to dress up a work outfit! Never underestimate the power of a statement necklace with a blazer. BaubleBar has teamed up with Target to create a line called SUGARFIX and guys, it’s awesome. My favorite piece is probably this druzy bib necklace – and it’s only $20!! Into the shopping basket it goes. Also, getting a serious giggle over this iPhone case. That goes into the basket too.

Reading: I’m currently reading Better Than Before by Gretchen Rubin. If you’re also a fan of Gretchen and her sister Elizabeth’s podcast Happier like I am, a lot of the big thoughts and concepts are ones they touch on in the show. Gretchen goes much more in-depth in her book and since I’m a visual learner, the book’s been fascinating and given me a lot of food for thoughts and things to consider in how I make the everyday decisions. If human behavior piques your interest, I highly recommend this book so far.

Listening: I mentioned recently that I’ve gotten really into podcasts lately, one in particular. In the last few weeks, I swapped binge-watching for binge-listening and worked my way through all 52 episodes of Lore. I have always loved haunted history so Lore is exactly my cup of tea. The host, Aaron Mahnke, gets to the root of urban legends, campfire stories as well as centuries-old folklore. From the Salem Witch Trials to the origins of vampires and even Irish folklore Aaron covers it all and his storytelling skills are on point. When I realized I was spending virtually hours hooked on this podcast, I used a habit-making technique I picked up from the Happier podcast to be productive while also scaring myself silly. 

Super Bowl-ing: I’m planning on whipping up some good ol’ Buffalo chicken dip for Super Bowl Sunday with my friends. Obviously, it’s not 28 Day Reset friendly so I’ll be abstaining from the dip…and most, if not all of the spread we’re planning. But healthy gameday snacks exist! My favorite food blogger, Serena of Domesticate Me, rounded up her list of 30 Gameday Recipes to enjoy the game (and the ads!!) relatively guilt-free.

    Your cauliflower rice/Brussels meal sounds amazing! I’ve never tried cauliflower rice before but this weekend consisted of pizza, Tai, and Duck Donuts… so I think a carb hiatus might not be the worst idea.

      It’s my new favorite dinner! I will also season it with this Mediterranean spice from Wegman’s that is the absolute best!! Mmm that sounds like a delicious weekend but I hear you on the carb hiatus. That’s one of the reasons I’m doing this reset – I’ve been feeling kinda fluffy lately!
