Yup. I did all of the above. And I gotta say, the backstories this season on OITNB blew my mind!! Spoiler alert: Chang is one coldblooded lady.
On Thursday night when I discovered OITNB was “early released” (Point Netflix for the excellent pun use), I somehow limited myself to only watching ONE episode. If only I had that much self control around cookies…
I managed to drag myself away from Netflix on Saturday night for two birthday celebrations but by Sunday, I just had to get through the final episode!! Of course, a girl’s gotta eat and that means less time with the Litchfield ladies. Oh, and the whole 90-degree-surface-of-the-sun thing that makes my kitchen the very last place I’d want to be.
Right now the major criteria for dishes involves a) As little time as possible and b) Not turning on my oven because it’s so hot I might actually combust.
The grill, on the other hand, is totally fair game.
As an apartment dweller, I rely on my George Foreman for all things grilled when I’m not relying on my friends with grills. A quick 5 minutes with good ol’ George and watermelon, if possible, tastes even better!
Grilling watermelon gives it this awesome smoky flavor and when paired with creamy burrata + peppery arugula, OMG. Sprinkling sea salt on watermelon brings out the sweet flavor so pretty much, this dish hits all the major tastes. Oh and it only takes 5 minutes to prepare. And you know what that means…
More time watching OITNB!!

I gotta say, grilled watermelon, burrata + arugula salad leftovers stuffed into a pita makes for one awesome desk lunch!
