A fun result of being out of school is that I have more free time for my hobbies. For those who follow me on Instagram, you know I’m back into reading! Another activity that was put on the back burner (literally) during college was cooking. I find cooking really therapeutic so usually on Sundays, I’ll plan my weekly menus, cook up a storm and divide the meals into Tupperware for the week.
Thanks to Pinterest, I’ve been scouring new food websites for recipe ideas, tricks and tips. I think my favorite site so far is
I love how each recipe breaks down the nutritional value of each dish and it’s very easy to save recipes for later. You can even print a customized grocery list! I think once I start a big kid job, I’ll be taking advantage of this feature more.
The first recipe I tried from Skinny Taste was for “Bangin’ Grilled Shrimp Skewers.” I mean, with a name like that, how could you not want to try them? Well, they more than lived up to their name!
I modified the recipe a bit to suit my taste and accomodate what was in my refrigerator/pantry.
Ingredients
2 1/2 tbsp light mayonnaise
Fresh basil leaves, to taste
Sriracha, to taste
Fully cooked frozen shrimp
Cooking spray (I used PAM)
* NOTE: Of course I picked the recipe that calls for sriracha!
Directions:
1. Thaw out the shrimp.
2. Combine the mayonniase, basil leaves and sriracha in a bowl.
3. Because I live in an apartment, I used my George Foreman grill for the shrimp. I covered the grill with PAM but you can use your preferred cooking spray.
4. Grill the shrimp for about 6-8 minutes.
5. Meanwhile, I boiled some pasta: Trader Joe’s chive linguine. Drain.
6. On a plate, I arranged a bit of pasta and then piled on the shrimp.
7. Lastly, I brushed on the sauce from step 2.
It was so delicious, I forgot to pause to take a picture of it for you! But don’t worry, I’ll be sure to make it again 🙂
I love when I read a recipe and I already have all the ingredients at home – looks like I know what I’ll be making tonight!
You know what? I might actually make this tonight! I had some frozen shrimp that needed to be cooked!
