Happy Tuesday! Why can’t all weekends be long weekends? I slept in, finished Julie Andrews’ autobiography (SO good + made me appreciate Mary Poppins even more), caught up with friends, and got in a few workouts including a long walk around town.
Since I slept in on Sunday, I decided it would be a good time to try out a Trader Joe’s hack I’d seen around the internet: using an air fryer to turn Trader Joe’s Cauliflower Gnocchi into French Toast Bites. I don’t have an air fryer (my stand mixer and Instant Pot have laid claim to most of my kitchen counter space) and wondered if I could get the same results just with a regular stovetop and skillet. Spoiler alert: You can!
For these French Toast Bites, I recommend you use a fresh, unopened bag of Trader Joe’s Cauliflower Gnocchi. Heat up a skillet with coconut oil (don’t use olive oil for this recipe!) and once hot, add in the gnocchi. Spritz again with coconut oil to ensure they’re evenly coated. Cook as you normally do until the outsides are crispy.
While you keep an eye on the gnocchi in the skillet, add granulated sugar and cinnamon to a bowl and mix. Once your gnocchis are done, pop them immediately into the cinnamon-sugar mixture and toss to coat all sides. Serve immediately!! Sadly they’re only good when hot.
If you want to take it a step further, you can melt Trader Joe’s Cinnabun Spread in the microwave for about 12-15 seconds and drizzle on top for a cin-fully delicious breakfast treat. C’mon, like you thought I was going to write a post without a pun!
You could also make a quick glaze with powdered sugar and milk and maaayybeee a dash of vanilla extract if you have it on hand.
