Strawberry Cucumber Moscow Mule Popsicles

Serves: 8 Popsicles
- 2 cups Persian cucumbers, chopped
- 2 cups strawberries, chopped
- ¼ cup simple syrup
- ¼ cup ginger beer
- ¼ cup vodka
- In a blender (I used my tried 'n true immersion blender), add the cucumbers, strawberries and simple syrup. Puree until smooth. Pour into bowl.
- Add the remaining ingredients and stir to combine thoroughly.
- Pour into Popsicle mold and let freeze for at least 4 hours.
- Let sit at room temperature for about 5-10 minutes before removing Popsicle from mold.
