Pour the bottle of IZZE Sparkling Peach and top with the gelatin. Let sit at room temperature for 5 minutes. The gelatin will form a wavy layer over the IZZE. Just go with it.
Over medium heat, heat the IZZE-gelatin mixture for about 2 minutes or until the gelatin is completely dissolved, stirring constantly. Check to make sure it is completely dissolved by dipping two fingers into the mixture and rubbing. You shouldn't feel any granules.
Off the heat, pour in the vodka and stir to combine.
Pour into the ice cube trays or into Dixie cups.
Let freeze for 4 hours and then serve!
Notes
I used ice cube trays to create the Jello shots and used 2 trays of 16 cubes each. If you are using Dixie cups, the numbers may be different.
