easy vegetable curry

Week night dinners can be a struggle or just a regular pain. When you come home, the idea of pawing through your fridge and pantry, preparing a meal and then dealing with dirty dishes is enough to have you reaching for your favorite takeout place’s menu. Or forego dinner altogether for a meal of tortilla chips and guacamole. Guilty on both counts.

Curry is an excellent way to include vegetables in your daily diet. Have leftover carrots? Throw ’em in. The sky’s the limit. Go nuts. The best part? Only one pot to clean!
