Lately, I’ve had a constant craving for pasta. Marinara, pesto, linguine, gnocchi. I want it all. I purchased creme fraiche on a whim at Trader Joe’s last week and turned to Google for recipe inspiration. Stumbling upon a recipe for creme fraiche-based sauce, I knew I had to give it a whirl. But with a little substitute: kale for parsley.
I’ve tried kale before but honestly could not really get into it as much as I wanted to. Then, I learned a tip: massaging the kale. No joke. Perhaps the kale was just really stressed after a long day at the farmers market? Perhaps the kale would prefer a glass of wine? I felt slightly ridiculous as I did it but after tasting the dish, the extra step really made a world of difference. The creme fraiche pasta sauce with kale had a tangy, nutty flavor: perfect for a Sunday dinner. I added red pepper flakes for a little zest and my pasta craving has been satiated (for now).
