Couscous Dinner

I’ve been trying to ration out my meals so I wouldn’t have to go grocery shopping until Friday. Tomorrow I’ll be stocking up on groceries again but I was trying to make a meal for dinner that combined several ingredients still in my pantry. Thus, I give you my couscous dinner:

Yummy!

Ingredients: 

  • Whole Wheat Couscous
  • Tomatoes
  • Trader Joe’s Corn Salsa
  • Red Pepper Flakes & Pepper to Taste

Preparation: 

  • Make couscous according to box directions.
  • While the couscous cooks, chop up tomatoes.
  • Once couscous is done, place onto plate.
  • Then, pile chopped tomatoes onto couscous and scoop Trader Joe’s corn salsa on top.
  • Sprinkle with red pepper flakes & pepper to taste.

It was super yummy & the red pepper flakes gave it a kick, which I loved. I’m going to Trader Joe’s tomorrow so be ready for more recipes!
