I might have an obsession with overnight oats. It all started out innocently when I decided to give a PB + J overnight oats recipe a whirl. After one bite, I was sold and overnight oats has become my go-to breakfast. I love how it keeps me full for hours, is packed with fiber and protein and can be completely customizable to your tastes/whatever you have on hand. The recipe is also incredibly simple: 1/2 cup rolled oats, 1/2 cup almond milk and 1 tbsp chia seeds. After that, you can load it with whatever you’re in the mood for! I’ve done strawberry and orange zest, figs and cranberries (A spin on this chia seed pudding), bananas and dark chocolate shavings. You really can’t go wrong!
I was thinking about a new overnight oats combo when I realized the answer was staring right at me the whole time. Oatmeal raisin overnight oats! I’ve always thought of oatmeal raisin cookies as the unsung hero of the cookie world. They get a bad rap for not being chocolate chip but I’d much rather have an oatmeal raisin cookie over chocolate chip any day of the week. The spices, the texture, I love it all.
I didn’t think it was possible for me to love oatmeal raisin cookies any more than I already do. But then I made these oatmeal raisin cookie overnight oats and my mind and taste buds were blown. Socks were knocked off. Move over, PB + J, there’s a new favorite overnight oats combo in town.
This oatmeal raisin cookie overnight oats recipe is gluten-free and vegan and you can make a big batch for the week in about 5 minutes. What’s not to love??
- ½ cup rolled oats
- ½ cup almond milk (Plus a splash extra)
- 1 tbsp chia seeds
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tbsp agave nectar
- Raisins for topping
- In a mason jar or a container with a sealed lid, add all the ingredients except for the raisins. Stir to combine thoroughly.
- Seal jar and place in fridge overnight.
- Top with raisins.
