Okay, now that Thanksgiving + my birthday are officially over, I have jumped into full-on Christmas mode. Bing and Mariah dance parties. Gold glitter everywhere. Practically keeling over with happiness whenever car with a Christmas tree on top drives by. And, of course, my kitchen has to get into the spirit of the season, too!
I’ve read our sense of smell is our most powerful sense when it comes to memories. Whenever Christmas comes to my mind, the first smell I think of? Snickerdoodle. Each year, my mom and I would go to the gourmet coffee shop down the street to pick up fresh coffee beans to be grinded right the counter for hostess gifts. I beelined straight to the flavored coffee bean wall to lift each lid and deeply inhale. Hands down, my favorite bean was their snickerdoodle. I’d methodically go down the rows (at least to the ones I could reach) but always went back to the snickerdoodle.
This year, I wanted to put a fun twist on the Christmas cookie. So what’s more fun than snickerdoodle cookies? Egg nog ice cream snickerdoodle sandwiches, that’s what!
And, let’s be real, how much fun is it to say snickerdoodle?
To make the snickerdoodle cookies, I followed Jessica of How Sweet It Is‘s recipe because you can’t get any better than that. My only tweak was adding more sugar to the cinnamon sugar mix that you roll the dough balls in. That was it + they came out wonderfully!
As for the ice cream-y goodness, the moment I spotted Egg Nog Ice Cream at Trader Joe’s, I knew I had to use it in an ice cream sandwich. If AP English Language and AP Literature taught me anything, it’s that you can’t fight fate. I love egg nog but with its heavy, rich texture, I can really only drink two glasses before I have to call it quits. The light ice cream gives you all the delicious flavors of egg nog without feeling immediately full. So go on, have more than one snickerdoodle sandwich! It’s Christmas, after all.
