Did you know President Ronald Reagan signed into law in 1984 that July is National Ice Cream Month? Regardless of your political inclinations, I think we can all herald this important moment in America’s rich dessert history. Sunday (sundae?) was actually National Ice Cream Day and I hope you celebrated accordingly! I’m continuing my challenge to elevate the traditional ice cream sandwich this month (remember the strawberry shortcake?) and was scrolling through Pinterest when I saw someone use waffles as the “sandwich.” I liked the waffle idea but I thought hmmm waffle…waffle…BELGIAN WAFFLE!! (I sincerely apologize to those of you World Cup fans who may still be abstaining from Belgian waffles). Once I had the sandwich idea down, I had to figure out the filling. I love vanilla ice cream and that’s what I had my freezer so that settled that. But I wanted something to give it pizzazz. The jazz hands of ice cream sandwich filling, if you will. It was back to the refrigerator and pantry! For a split second, I considered using my Trader Joe’s fleur de sel caramel sauce until I remembered: I had a jar of Trader Joe’s lemon curd sitting patiently in my pantry, just waiting to be taken down from the shelf and given the chance to shine. Well, Little Lemon Curd, you certainly shined. I spread several spoonfuls on my Belgian waffle, which reminds me: I used the frozen Trader Joe’s Belgian waffles for this dessert. Because my kitchen is teeny and certainly cannot house a Belgian waffle maker or any large appliance for that matter. Though I do still fantasize about the day I bring home a KitchenAid stand mixer. Be still my culinary heart…what were we talking about? Oh right, ice cream sandwiches! Evenly spread the lemon curd over the waffle and add a scoop or two of creamy vanilla ice cream. If you are feeling particularly zesty, go on and add another spoonful of lemon curd. Top with the second waffle and you have a delicious dessert you can put together in 5 minutes. By the way, this won’t be the last you see of Trader Joe’s lemon curd. That jar is positively filled with zesty lemony heaven. I hope I’m not the only one who has strong feelings about lemon curd!
