I flew home to New York on Friday so last weekend I didn’t go grocery shopping and decided to get creative with my fridge & pantry.
I love Mexican cuisine, I would eat it just about every day if my waistline wouldn’t revolt. Quesadillas are honestly the easiest dinner to make and actually make a delicious lunch for the next day. Talk about a brown bag upgrade! The only time consuming part of a quesadilla is cleaning and chopping the veggies you want inside it. I a) was too tired to even think about pulling out my cutting board and b) didn’t have any veggies to toss into the quesadilla. What’s a girl to do?
I went back to my fridge and spied a jar of Trader Joe’s Cowboy Caviar.
A mixture of corn, black beans and chopped tomatoes, Cowboy Caviar is everything you’d want inside your quesadilla but without the extra chopping mess. I put 2 spoonfuls into my quesadilla. Hello, time saver!
I also suggest Cowboy Caviar as an alternative to salsa and will definitely add a healthy scoop to my next taco salad.
