Now that my capstone course & internship are over, I thought I’d have more free time to really cook but alas, whoever said applying for jobs is a full time job was more correct than I would like to admit. Seriously, I’m drowning in cover letters!
I’m used to a pretty packed schedule and coming home tired and having to cook dinner. However, one of my favorite meals to make is a simple version of a stir fry. Usually, I make it for dinner and save the leftovers for tomorrow’s lunch. I love this meal because it’s delicious and quick to make (read: I won’t spoil my appetite waiting for it to cook & snacking away).
Ingredients
Broccoli
Bell peppers
Quinoa
Soy sauce
Preparation
Prepare the quinoa as instructed on the bag (this only takes about 5 minutes).
Chop the bell peppers into strips and toss the vegetables into a skillet over medium heat. Cover the skillet.
Saute the vegetables until they get to your desired consistency. Shake some soy sauce over the vegetables and give them a toss to evenly coat.
Spread the vegetables over the quinoa and enjoy!
Because I love spicy, I usually add some red pepper flakes to give it a kick. Sometimes, I’ll make this recipe to use any vegetable I have so take a look around your fridge and see what you have to add to the mix. Asparagus is a tasty addition to this recipe! I call it my simple stir fry because you can really just tailor the recipe to fit what’s in your vegetable crisper & what you’re in the mood for!
